This is a simple garlic-thyme flavored lamb dish.

Ingredients
  • 3 kilo (7 lbs) leg of lamb, bone-in
  • 4 cloves of garlic
  • A few sprigs of thyme or 1 T dried
  • 2 T olive oil
  • 2 t salt
  • 1t pepper
Instructions
  1. Preheat the oven to 210° C or 425°F.
  2. Cut the garlic into slivers
  3. Cut holes all over the meat and shove the garlic into the holes.
  4. Pour the olive oil over the lamb.
  5. Sprinkle the thyme, salt and pepper over the lamb.
  6. Cook covered for 45 minutes and uncovered for another 25-30 minutes. The meat should be well done on the outside and pink on the inside.
