Duck à l'Orange

Ingredients
  • 4 duck breasts
  • butter
  • 2 oranges
  • ½ litre orange juice
  • 2 t Dijon mustard
  • 2 T plus 1 t sugar
  • salt and pepper
Instructions
  1. Preheat the oven to 200°C or 375°F
  2. Score the duck fat in a criss-cross pattern without touching the meat.
  3. Cook fat-side first in pan for 10 mn (and sprinkle salt and pepper).
  4. Flip, and cook on other side for 5 minutes. Set aside.
  5. Remove most of grease (put in closed container and throw in garbage - not down sink).
  6. Take zest of orange and orange juice and cook until it reduces.
  7. Slice duck, and slice orange to put on top.
  8. When sauce is reduced, add sugar, mustard, salt and pepper.
  9. Pour over duck and put in oven for 15 minutes.
  10. Serve hot with rice.
