Ingredients
  • Half-pound of cooked red beans
  • 1 Onion
  • 2-4 cloves of garlic
  • 3T Olive or canola oil
  • 1 cup water
  • 2.5 cups of sour cream or crème fraiche
  • 2 cups green olives
  • 2 jars mild salsa
  • 4 cups grated cheddar cheese
  • Big bowl of plain, salted tortilla chips
Instructions
  1. Preheat the oven to 375°F.
  2. Rinse red beans.
  3. Chop onions and garlic.
  4. Sauté onions and garlic in olive oil.
  5. When brown, add the beans - sauté for 10 minutes.
  6. Purée them in a Cuisinart with a cup of water.
  7. Refry them in 2 more T oil for 15 mins.
  8. Spread beans over bottom of 9x13 greased pan.
  9. Spread sour cream over that.
  10. Spread chopped olives over that.
  11. Spread salsa over that.
  12. Spread grated cheddar over that.
  13. Bake for about 20 minutes.
  14. Serve warm with corn chips.
