Spaghetti Carbonara with Lemon Zest

Ingredients
  • 150 grams cooked pasta (about 70 grams uncooked). That's 5.25 ounces cooked, and 2.5 ounces uncooked.
  • 1 egg
  • 65 grams bacon about (2.25 ounces)
  • 30 grams parmesan (1 oz or 2.5 Tablespoons)
  • Zest of one lemon
  • white pepper (about ⅛ teaspoon)
  • Chives (about ¼ teaspoon)
  • 1 teaspoon olive oil for the pasta
Instructions
  1. Boil salted water and cook pasta.
  2. Fry bacon and blot out oil.
  3. Chop bacon.
  4. Beat egg and add zest and spices.
  5. Grate parmesan, if needed.
  6. Put 1 teaspoon olive oil in the pasta, then mix the pasta thoroughly with the egg mixture while still hot.
  7. Add the bacon and parmesan, and serve with a tossed salad.
