Buckwheat Galettes

This is recipe for a salty buckwheat crèpe, naturally gluten free.

Serves: 3-4
Ingredients
  • 1.5 cups buckwheat
  • 1 egg, separated
  • 2 teaspoons flour
  • 2 teaspoons olive oil
  • 2 cups water
  • pinch of salt
  • pinch of white pepper
Instructions
  1. Place the buckwheat flour in a bowl and form a well.
  2. Separate the egg and put the yolk in the well of flour.
  3. Mix those together and add the water, continuing to mix.
  4. In a separate bowl, beat the egg white.
  5. Add a pinch of salt and pepper and beat some more.
  6. Add the 2 t regular or GF flour.
  7. Mix then add the olive oil before mixing again.
  8. Add the egg white mix to the buckwheat mix and blend again.
  9. Let it sit covered and room temperature for an hour or so.
  10. Pour 2 ladle-full of batter on a hot crèpe pan and spread to make one galette.
