A spicy (but not hot) Moroccan chicken dish with sauce that you serve over rice.

Ingredients
  • whole chicken
  • 4 onions
  • 6 cloves of garlic
  • 2 two inch pieces of ginger
  • ⅓-1/2 cup olive oil
  • 1T turmeric
  • 1T paprika
  • ¼t saffron
  • 1T sea salt
  • 2 small cans of crushed tomatoes
  • 3 lemons
  • 160 grams pitted, drained green olives
  • rice - on the side
Instructions
  1. Braise the chicken on all sides, then remove to a plate.
  2. Chop the onions, garlic and ginger and sauté in olive oil.
  3. Add all the spices and sauté together.
  4. Return the chicken to the pot and add the tomatoes.
  5. Juice the lemons and add the juice.
  6. Simmer for over 2 hours, turning every 20-30 minutes.
  7. Add the olives.
  8. Serve hot over rice.
