Ingredients
  • 2 lbs or 1 Kilo or 8 large carrots, peeled and washed
  • 2 medium onions
  • 1 clove garlic
  • 1-2 Tablespoons minced fresh ginger (or 2 teaspoons ginger powder)
  • 2 T olive oil
  • 6 cups water
  • 2 bouillon cubes
  • 1 T orange juice
  • ½ t paprika
  • ½ t nutmeg
  • 1 cup heavy cream
  • ½ t salt (optional)
  • 1 t sugar (optional)
Instructions
  1. Chop up onions, garlic, ginger and sauté in oil until browned.
  2. Add the chopped carrots.
  3. Add the water, bouillon, juice and spices.
  4. Boil, then bring to simmer and cover - cook for 1 hour.
  5. Add the cream.
  6. Blend the soup
  7. Add the salt and sugar if you wish.
