Cherry Clafoutis
 
 
A warm fruit dish with baked topping.

Ingredients
  • 500 gr cherries, fresh or frozen
  • 40 g butter (3T)
  • ⅔-1c sugar
  • ½ t salt
  • 1 t vanilla
  • 3 eggs
  • 1¾ c flour
  • 1 cream and/or milk
  • Optional: lemon zest, slivered almonds, whipped cream, confectioner sugar
Instructions
  1. Preheat the oven to 325°F or 160°C.
  2. Butter the porcelain dish.
  3. Sprinkle 3T to ½ cup of sugar on the cherries and let sit.
  4. Beat the butter, then add sugar, salt, vanilla. Blend until creamy.
  5. Alternate between adding the milk and flour, blending til smooth.
  6. Pour cherries on bottom of porcelain dish.
  7. Pour batter on top.
  8. Sprinkle with almonds if desired.
  9. Put in oven, turning every 15 to 20 minutes, and keeping a careful eye that it doesn't burn.
