Peel it.
Notice how long the French cucumbers are? The seeds are tiny in this variety.
Slice it up thinly.
Hey kids – get outa there.
Put half a yoghurt container, 2 tablespoons of sour cream (or crème fraiche), 1/4 t salt and just a pinch of white pepper.
And then add 1 1/2 teaspoons of fresh or frozen chives. Or dried, if you really have no choice.
So easy.
So creamy.
- 1 cucumber
- ½ pot of yogurt
- 2 T sour cream or crème fraiche
- ¼ t salt
- pinch of white pepper
- 1.5 t chives
- Peel and slice cucumber.
- Mix sauce.
- Stir together and serve.
So creamy.

What do you mean, Cynthia? Do you mean that instead of slicing the cucumbers and mixing the sauce in, you cut them in little sticks? Is your dressing the same?

(And here’s something embarrassing: it never occurred to me to freeze fresh herbs. I’ll often only need a pinch in a recipe and I’m reluctant to buy a whole little pouch so I often use dried or, alas, do without. But freezing…what a revelation! I need to look into that before I head to the store later to buy some dill (or not) for an egg salad.)

I’m not so sure I would have thought of it, but frozen herbs are such a big thing here. Now it seems natural, because they are just like fresh. (By the way, I do this with ginger too – I peel it and cut it in chunks, and freeze what I don’t use).
