Dijon Mustard Tarte

Ingredients
  • Crust:
  • 125 grams unsalted butter (about ½ cup)
  • 2 cups flour - I use gluten-free
  • 1 egg (if using GF)
  • 1 teaspoon large grain sea salt
  • 1-3 tablespoons cold water
  • Filling:
  • 2 heaping tablespoons Dijon mustard
  • 2-3 cups grated Swiss or Emmental cheese
  • 2-6 ripe tomatoes, depending on size
  • 2 teaspoons dried basil or 1-2 tablespoons fresh
  • olive oil, salt and pepper (optional)
Instructions
  1. Preheat the oven to 350°F or 180°C.
  2. Put crust ingredients in the Cuisinart, except the water. Mix and add the water one tablespoon at a time until it forms a ball.
  3. Put parchment paper underneath and on top, flatten, and roll out to ⅛" thick.
  4. Slide the crust on the quiche pan and trim the excess crust and paper.
  5. Slather the mustard on the bottom of the crust (not too much on the sides).
  6. Cover bottom with cheese.
  7. Slice the tomatoes and scallop them generously on the tarte to cover the whole thing.
  8. Sprinkle basil and drizzle olive oil on top.
  9. Bake for 30-45 minutes and turn if necessary.
